Recipe: Bran Flax Muffins

Flaxseed is a good source of omega-3 fatty acids

Ingredients:
1-1/2 cups flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1-1/2 cups carrots, finely shredded
2 apples, peeled and shredded
1/2 cup raisins
1/2 cup nuts, chopped
3/4 cup skim milk
2 eggs, beaten
1 teaspoon vanilla

How to make this recipe:
Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
Stir in carrots, apples, raisins and nuts.
Combine milk, beaten eggs and vanilla.
Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not overmix.

Fill muffin cups 3/4 full.
Bake at 350oF for 15-20 minutes. Notes: Baking tips for flaxseed meal:

Ground flaxseed can be substituted for shortening or cooking oil at a ratio of 3 to 1 in baked goods. For example, 1-1/2 cups of ground flaxseed can replace 1/2 cup butter, margarine or cooking oil in a recipe. Baked goods will tend to brown more quickly.
