1/2 cup zucchini, diced
8 mushrooms, diced
1/2 onion, diced
1 teaspoon vegetable oil
1/2 teaspoon cumin powder
1/4 teaspoon chili powder
Pinch of cayenne pepper
1 cup refried beans
6 flour tortillas
6 ounces cheddar cheese, grated
Salsa
1/2 head lettuce, shredded
1 tomato, diced
How to make this recipe:
Saute zucchini, mushrooms, and onion in oil with the spices until soft.
Heat the beans in the microwave or on the stovetop until hot.
Dab each tortilla with beans and cooked veggie mix, sprinkle with cheese, salsa, lettuce and tomato.
Fold like a fast-food burrito and enjoy.
Options:
Use a variety of different vegetables including green peppers, green onions, cooked potatoes, shredded carrots or cabbage.
Use mozzarella or sharp cheddar cheese.
Try white or yellow corn tortillas. Heat them in the microwave for 30 seconds or in a hot, dry skillet until warm. Makes 6 servings.
