Salad:
8 cups baby spinach, torn into bite sized pieces
1 bunch green onions, sliced
4 seedless tangerines, peeled and separated into sections
1 cup dried cranberries
Vinaigrette:
1 tablespoons Balsamic vinegar
1 tablespoon orange juice
2 teaspoons mustard
1/2 cup olive oil
Salt and pepper
How to make this recipe:
In large bowl, combine spinach, onions, tangerines and cranberries. In a small bowl whisk together vinaigrette ingredients. Toss with salad just before serving. Salt and pepper to taste. Serves 8.
