1 4-ounce can mild green chilies,chopped
1 or 2 medium garlic cloves
2 19-ounce cans of chickpeas, drained and rinsed
1/2 small red pepper,seeded and chopped
1/3 cup fresh cilantro, chopped
2 teaspoons cumin
1/2 teaspoon salt
2/3 cup bread crumbs(unseasoned)
1 kiwi fruit diced in 1/4 inch pieces
1 sm. ripe papaya, diced as above
1/2c. fresh pineapple,diced as other fruits
1tsp lime juice
2T.orange juice
1tsp. sugar
3T. olive oil
How to make this recipe:
In a large food processor, place the garlic and process to a fine chop. Add the chilies and pluse just two or three times until they are finely chopped.
Remove 1/2 teaspoon of this mixture and transfer to a medium bowl. To the food processor mixture add the chickpeas,pepper, 2 tablespoons of cilantro, cumin and salt. Pulse the mixture until it forms a course paste. Scrape the workbowl a couple of times during this process. Add the bread crumbs and pulse just until mixed. Shape the mixture into eight patties. Add the remaining cilantro,kiwi,papaya, pinapple lime, orange juice, sugar and 1 tablespoon of olive oil to the medium bowl and stir to mix.
Heat remaining olive oil in a large nonstick skillet over medium heat. Cook the patties for about four minutes per side until golden. Place two patties on each plate and top with fruit salsa. Serve immediately. Prep Time: 30 min.(aprox.)
