6 cups total watermelon, honeydew and cantaloupe balls
1 envelope gelatin
1/4 cup cold water
1/4 teaspoon grated lemon rind
1 cup boiling water
1 cup port wine or grape juice
3 tablespoons shredded and toasted almonds
Mixed fresh fruit to fill center of ring
How to make this recipe:
Soften gelatin in cold water, add lemon rind and boiling water, stirring until dissolved. Add fruit juice or wine, let chill until it begins to thicken. Add melon balls. Dip a ring mold in cold water and sprinkle with almonds. Pour gelatin mixture into mold and chill until set.
Unmold onto greens or fresh parsley; fill with fresh fruit.
