Tortilla chips with layers of beans, rice and toppings

Ingredients:
1 bag lowfat or reg tortilla chips
1 pkg red beans & rice or black beans & rice
shredded lettuce
chopped tomatoes
shredded cheese (any kind)

Optional:
Salsa
Jalapenos
Chopped onions
Olives

Directions:
Cook beans & rice. Spread tortilla chips on individual plates. Cover chips with beans & rice, then lettuce, tomatoes, cheese and other optional toppings.


Let everyone fix their own and then have fix your own sundaes, too! Kids love to make their own foods.

Prep time: 30 min or less

Serves 4 or more depending on package sizes
