Two Corn Casserole

Favorite Casserole, get a lot of requests for the recipe

Ingredients:
1 medium onion, chopped
1/2 small red pepper
2 tbs. butter or margarine
1 can whole kernal corn
1 can creamed corn
1 box (4oz.) corn muffin mix
4 eggs, slightly beaten
1 cup shredded cheddar cheese

Directions:
Cook onion and pepper until glazed.
Add the two corns, allowing the mix to cool slightly. Add the eggs, mixing thoroughly. Add the corn muffin mix and 1/2 the cheese.

Pour into 4 quart baking pan or bowl. Bake for 45 minutes @ 400 degrees. Pull out and sprinkle top with remaining cheese.

Bake for another 5 minutes to melt the cheese.

Great with turkey or chicken dishes.

Pre time: 15 min.
