Corn ChowderA creamy rich chowder made Southwestern style.
Ingredients:
4 1ean slices of peppered bacon
1 small onion
2 medium white potatoes
3 sta1ks celery
1 clove garlic
6 baby carrots
1/2 red pimento pepper
1/2 green pepper
1 can cream sty1e corn
1 can shoepeg white corn
1 can evaporated milk
1-1/2 cups water
1 tsp. chili powder or more
1-1/2 cups mi1kDirections:
Chop bacon and all vegetables
Saute bacon, onion, celery, carrots, potatoes, peppers
Add water and simmer until crisp tender. Add both corns, canned milk and other milk.
Heat (but not boil), add chili powder to taste and any other seasonings that are your favorite.
Prep time: 30 minutes
Makes 4 very generous servings
