Asian Pasta SaladIngredients:
Dressing:
1/4 cup rice vinegar
2 tablespoons toasted sesame oil
1 tablespoon low-sodium soy sauce
1 teaspoon finely chopped garlic
1 teaspoon grated ginger
1/2 teaspoon crushed chile peppers
1/4 teaspoon salt
Salad:
2 cups cooked thin noodles
1 cup seedless red grape halves
1 cup fresh or frozen pea pods, strings removed
1 cup mung bean sprouts
1/2 cup sliced green onions
1 cup salad cooked shrimp or cooked chicken breast pieces
Garnish:
6 large red leaf lettuce leavesDirections:
Combine the vinegar, oil, soy sauce, garlic, ginger, crushed chile peppers, and salt in a sealed container or bowl and shake or stir. Set aside.
Toss together the noodles, grapes, pea pods, bean sprouts, green onion and shrimp or grilled chicken. Pour the dressing over the mix and stir well. Let sit 30 minutes for the flavors to mingle. Serve on top of red leaf lettuce.
