Coconut Biscuits

Ingredients:
2 cups all-purpose flour
2-1/2 tsp baking powder
1/2 tsp salt
2 tablespoons sugar
1 cup sweetened flaked coconut
1/4 cup butter or margarine (cold)
2 eggs
1/3 cup milk

Directions:
Preheat oven to 450 degrees. In a bowl, combine flour, sugar, baking powder, salt and coconut. Cut in the butter until the mixture looks like coarse crumbs. Combine the eggs and milk, and then fold it into the dry ingredients just until moistened. Turn the dough onto a floured surface and pat gently into a 8 inch circle (about 3/4 of an inch thick).

Cut the dough into eight pie-shaped wedges. Separate the wedges and place them onto a lightly greased baking sheet. Before baking, let the uncooked biscuits rest 10 minutes. Bake at 450 degrees for 13-17 minutes, or until golden brown.
