Chicken and Rice Soup

This soup is easy to make and makes a great dinner when paired with hearty bread and salad.

Ingredients:
10 cups of water
3 Tsp Onion Soup mix (Or one minced onion)
1 Chicken breast
3 Celery stalks
4 Carrots
3 Cloves of garlic, minced
1 cup of rice
Salt and pepper to taste

Directions:
Cut carrots and celery into very small pieces.

Boil whole chicken breast, carrots and celery in 10 cups of water along with onion soup mix (or minced onion) for about 20 minutes.

Remove chicken from soup and cut meat away from bone. Cut chicken into small pieces and then add back into the soup.

Add minced garlic and one cup of rice (or two cups of cooked rice). Allow soup to simmer for another 20 minutes, and make sure the rice is tender. Add salt and pepper to taste. Enjoy!

Serve with rye bread and salad.

10 minutes to prepare, almost 50 minutes to cook.
