Black Bottom Cupcakes

Careful - these decadent cupcakes won't last long. When they cook, the rich chocolate settles to the bottom, hence the name "Black Bottom."

Ingredients:
The BLACK part
1-1/2 cups flour
1 cup sugar
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1 cup water
1/3 cup vegetable oil
1 teaspoon white vinegar

The WHITE Part
8 oz. neufchatel cheese (or cream cheese)
2 egg whites (or one whole egg)
1/3 cup sugar
6 oz. chocolate chips

Directions:
Preheat oven to 350 degrees, and line 18 muffin cups with liners (or grease 18 cupcake cups).

Heat oven to 350, and line 18 muffin cups with liners.

In a large bowl mix, on the BLACK side, flour, sugar, unsweetened cocoa, and baking soda. Add water, oil and vinegar until blended. Lumps are okay.

In a small bowl, beat cream cheese. Add eggs, sugar and then chocolate chips.

Scoop the BLACK mixture into cups. Put a scoop of WHITE in the center.
Bake 25-30 minutes. Cool 10 minutes in the pan and then remove from pan.

Very yummy with a cold glass of milk.

Makes 18 cupcakes
