Rhubarb Banana Bread

A great way to use up your ripe bananas. This bread tastes as good as it smells!

Ingredients:
2 cups all-purpose flour
1 cup whole wheat flour
1/4 cup wheat germ
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
2 whole eggs
3 bananas
1/4 cup milk
3/4 cup vegetable oil
1 1/4 cups dark-brown sugar
2 tsp. vanilla
2 1/2 cups diced rhubarb (about 3/4 lb.)
3/4 cup chopped pecans

Directions:
In a medium bowl, combine the flours, wheat germ, baking soda, baking powder, salt, cinnamon, allspice and nutmeg.

In a large mixing bowl, combine the banana, milk, eggs, oil, brown sugar and vanilla. Beat with electric mixer on high speed until fluffy. Stir in flour mixture until just moistened.

Stir in rhubarb and pecans. Divide batter between two greased 9x5x3" loaf pans.

Bake at 350 degrees F for about 50 min. or until it tests done with a pick. Cool on racks for 10 minutes before turning out to cool completely.
