Quick Cheesy Chicken Pockets

An easy-to-make but delicious dinner

Ingredients:
2 large skinned, boneless chicken breasts (or thighs, if you prefer)
4 slices of your favorite cheese
4 slices yellow onion
1 package crescent roll dough

Directions:
Preheat oven to 375 degrees F. Lightly spray a baking sheet with non-stick spray or lightly oil.

Open the package of crescent rolls - unroll and separate the dough at perforations. Put four triangles on a baking sheet - space them evenly.

Cut the chicken breasts in half, width-wise. Place one half breast on top of each of the four pieces of dough. On top of the chicken, place one slice of cheese and one slice of onion.

Put a second triangle of dough on top of each. Now try to pull the dough up from the bottom, and the top dough down, to enclose and seal the pockets. (You may have to get a little creative, and also will want to pinch the ends.)

Bake for 30 minutes until golden brown in color.

Serve with steamed veggies and/or salad

Prep time: 10 minutes

Serves 4

Nutritional note: You can use low-fat rolls and reduced-fat cheese if you like. Variation: instead use feta cheese, spinach and red bell pepper.
