Colored Cookies

This recipe is great fun for kids, and can be used anytime or adapted for holidays. Color cookies red and green at Christmas (use bell, star and Christmas tree cookie cutters); red and pink for Valentine's day (heart cookie cutters, of course); orange, yellow and brown in the autumn (cut into leaf shapes) or a rainbow of colors and shapes for a birthday party!

Ingredients:
1/2 cup butter
1/2 cup granulated sugar
1/4 tsp. lemon rind
1/4 tsp. salt
1 1/4 cups all-purpose flour
1/2 tsp. vanilla
1 egg
Food coloring

Directions:
Place butter and sugar together in a large mixing bowl or food processor and beat until creamy. Add egg, vanilla, lemon rind, and salt. Mix well. Gradually and mix until dough begins to form.

Shape dough into several balls. Color each ball diferently, using the food coloring. Don't forget to mix drops of colors together to make new colors.

Wrap each dough ball separately in plastic wrap and chill for at least 2 hours.

Preheat oven to 375 degrees. Roll dough ball into a lightly floured surface until it is about 1/4" thick. Cut out shapes with cookie cutters and place on a lighly greased baking sheet. Bake for 10-12 minutes or until cookie edges are golden.

Let the cookies cool and share with friends -- they'll be tickled pink!
