Kay's Sweet Potato SouffleMy mother-in-law makes this at every holiday and it's my absolute favorite. It's very easy and my kids love it.
Ingredients:
3 cups cooked or canned sweet potatoes, mashed
1 cup sugar
3 eggs
1/2 stick butter
1 teaspoon vanilla
Topping:
1 cup brown sugar
1/2 cup flour
1/2 stick butter
1 cup chopped nutsDirections:
Combine first ingredients and mix well. Pour into greased 2 quart dish. Mix topping by hand and sprinkle evenly over potato mix. Bake at 350 degrees until topping is light brown (about 30 minutes).
