Italian Baked ZucchiniIngredients:
1 lb. Italian sausage
6-8 c. wide egg noodles, cooked to package directions
1 10oz can of tomato sauce
1 10oz can of whole tomatoes, drained and cut into fours
2 c. parmesan cheese
1 c. mozzarella cheese
1 t. Italian seasoning
3 medium to large zucchini squashDirections:
Slice and boil zucchini until tender. Brown sausage in a skillet.
In a caserole dish, add zucchini, sausage, Italian seasoning, egg noodles, 1 cup of the parmesan, tomato sauce, and whole tomatoes. Top with remaining parmesan and mozzarella.
Bake in a 350 degree oven untill cheese on top is slightly browned and bubbly.
About 20 minutes
