Chicken and Wild RiceThis is sooo good and it makes a lot. I freeze leftovers in those disposable baking pans for future dinners. Usually I forget to set it down to thaw so I just put in oven and bake at 350 for about 90 minutes.
Ingredients:
8 cups cooked and chopped chicken
2 cups chopped celery
2 cups chopped onion
2 cups chopped green pepper
4 cans cream soup -- your choice
1 pint half and half
2 small cans sliced mushrooms
2 6 oz boxes wild rice (6-8 cups of rice)
shredded cheddar cheeseDirections:
Sauté the celery, onions and green pepper in a little butter or margarine.
Mix the soups, half and half, mushrooms and chicken. Prepare the rice according to package directions. Add to chicken mixture. Add the sautéed
veggies and mix well.
Top with cheese and bake at 350 for 35-45 minutes.
