Salsa - Fresh and Fast

This recipe is easy and addictingly delicious. It keeps well for at least a week in the refrigerator, so consider doubling these quantities!

Ingredients:
One 28-oz can peeled whole tomatos
2-3 green chili peppers (jalapeno or serrano
1/2 bunch of cilantro
1 clove garlic
1/2 white onion, chopped very finely
2 tablespoons cider vinegar
1 1/2 teaspoon lime juice
1 teaspoon salt
1 teaspoon cumin (optional)
Hot sauce to taste

Directions:
1. Strain the juice from the can of tomatoes into blender. Add cilantro, chili peppers and garlic, then blend and pour into a medium-sized bowl.

2. Blend the tomatoes separately (blending tomatoes and cilantro together will turn the tomatoes a rusty color) and add to the bowl.

3. Add chopped onion to the bowl, along with the remaining ingredients.

4. Chill for several hours before serving, so the flavors have a chance to meld.

Prep Time: 15-20 minutes
