Turkey spaghettiMade with turkey instead of beef, this spaghetti and sauce tastes just as good as the original but with a lot less fat.
Ingredients:
1 lb ground turkey
1 can (28 oz) tomatoes, cut up
1 small can (6 oz) tomato paste
1/2 cup finely chopped green bell pepper
1 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano, crushed
1 teaspoon dried basil, crushed (or 1 teaspoon fresh, finely chopped)
1/2 teaspoon black pepper
1/4 teaspoon salt
1 lb spaghetti, uncooked
Nonstick cooking sprayDirections:
Spray a large skillet with nonstick spray coating and preheat over high heat. Add turkey and cook, stirring occasionally, for five minutes. Make sure the turkey is cooked evenly. Drain fat and discard. Stir in the tomatoes with their juice, tomato paste green pepper, onion, garlic, oregano, basil and black pepper. Bring to a boil and then immediately reduce heat. Simmer covered for 15 minutes, stirring occasionally. Remove cover; simmer for 15 minutes more.
Meanwhile, cook spaghetti according to package directions. Drain well. Ladle sauce over the spaghetti.
