Holiday Ginger PoundcakeIngredients:
3/4 cup margarine
1 1/2 c. sugar
3 eggs
1 1/2 tsp. grated lemon peel
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking powder
1 1/2 tsp. ground ginger
3/4 tsp. salt
1 cup plain yogurtDirections:
In a large bowl, beat margarine and sugar until light. Beat in eggs, lemon peel and vanilla. Combine flour, baking powder, ginger and salt. Beat into sugar mixture, alternately with yogurt, until just blended. Spoon into greased and floured 9x5x3 inch loaf pan.
Bake at 350 degrees for one hour and 15 minutes or until toothpick inserted comes clean. Cool 15 minutes, then remove from pan.
Serve with yogurt or whipped cream and fresh or frozen berries.
