California BLT roll upsIngredients:
1 pound bacon
3 cups shredded lettuce
1/2 red bell pepper
2 large tomatoes
1 small onion
2 large ripe avacados
1 cup shredded Monterey Jack cheese
1/4 cup chopped black olives
1 package whole wheat tortillas
For Creamy Spread:
1 cup mayonaise
1/4 cup dijon mustard
1-1/2 T. dill weed
1 t. olive oilDirections:
In large skillet, brown bacon until crispy and place on paper towel to drain excess fat, put aside then thinly slice tomatoes, onion, pepper and avacado. Heat tortillas in microwave for one miniute or until soft and warm
cover tortilla with creamy spread and place bacon strips, lettuce, tomatoes, peppers, onion, avocado, olives and cheese. Roll up the tortilla and serve immediately.
To make the creamy spread: Mix all ingrediants together until smooth and creamy.Serve with chips and fresh fruit salad
