Salmon Cakes

This is a really good, quick meal idea that was passed on to me by my mother.

Ingredients:
1 (16 oz.) can salmon
1/2 cup Ritz cracker crumbs
2 beaten eggs
1/2 teaspoon salt
1/8 teaspoon paprika
1 (10 ounce) can cream of celery soup diluted with 1/3 cup milk (not water)

Directions:
Remove the little bones in the salmon and mix salmon with cracker crumbs, eggs, salt and paprika. Form into patties (just as you would a hamburger patty). Saute them until brown in butter, turning occasionally.

Serve the cakes with celery soup sauce on top.

I always serve this meal with rice.

Prep time: 10 minutes

Serves 3-6, depending on appetite
