Lemony MuffinsGolden and delicious great for breakfast with a lemon marmalade, or by themselves with a cup of tea or coffee. This recipe can be poured into heat-proof individual coffee cups and served as a dessert.
Ingredients:
2 cups flour
3 tsp baking powder
1/2 cup raw sugar
1 Tbsp lemon rind
1 cup lite sour cream
1/2 low fat milk
1/3 cup lemon juice
2 eggs
3 - 4 tablespoons of butter or low fat/cholesterol substitute (melted)Directions:
Sift flour and baking powder. Add sugar and rind.
In another bowl, mix egg, sour cream, melted butter,milk, lemon juice, until smooth. Combine the wet and dry ingredients.
Bake in preheated 400 F oven in either greased cups or muffin tins, until golden and firm to touch.Serve warm with a light cream cheese and a lemon marmade for breakfast
