No-Guilt Chicken Pot Pie

This is a fast, easy and delicious way to please the family.

Ingredients:
1 cup chicken, cubed
1 pkg (~9 oz) frozen mixed veggies, thawed
1 can (10-3/4 oz) cream of chicken soup (fat-free is good)
1/2 cup milk
1 egg
1 cup baking mix (I use Bisquick reduced fat)

Directions:
Preheat oven to 400 degrees F. In a 9-inch pie plate, combine the chicken, veggies and soup.

In a bowl, mix the milk, egg and baking mix and pour over chicken
mixture.

Bake 30 minutes or until golden brown on top.


This recipe was a trial run for me. My husband asks for it on a regular basis, and, as a new mom, I'm more than happy to do easy,
one dish meals!

Prep time: About 20 minutes

Serves 3-4, depending on appetite!
