Lemon Curd

Ingredients:
6 egg yolks
1 c sugar
1/3 c lemon juice
1-2 t. grated lemon peel, if desired
1/c butter

Directions:
Mix all except butter together in a microwave-safe bowl. Cook on high for 15 seconds at a time, stirring with a whisk in between, until thickened. (It's thick enough when it kinda goes "plop" when cooking.) Add butter a little bit at a time, stirring.

Cool. Store in refrigerator.
