Broccoli Cheese Casserole

This one is a favorite side dish at family dinners. Good for pot-luck, or make ahead to the point of baking and freeze it.

Ingredients:
2 c cooked rice
1 pkg frozen chopped broccoli
8 oz jar Cheez Whiz
1 can cream of chicken soup
1/2 c milk
1 small can sliced water chestnuts (omit these if you don't like them, but they give it a nice crunch)
3 T butter
1/2 c chopped celery
1/4 c chopped onion
Dash pepper (optional)

Directions:
Saute onions and celery in butter. Mix soup, milk, and a third of the jar of Cheez Whiz. Mix all ingredients, except the rest of the Cheez Whiz, and put in a casserole dish (I usually mix it in the casserole dish -- saves on clean-up).

Soften the rest of the Cheez Whiz in the microwave, then spoon over the top.

Bake 40 minutes at 350.
