Lobster ChowderIngredients:
2 cups lobster meat
1 medium onion
2 medium potatoes
1 pint milk
1 cup light cream
Butter, size of an egg
1 tsp salt
1/4 tsp pepperDirections:
Cook chopped onion and potatoes until tender in 1 cup of water.Add cooked lobster meat cut into pieces.Add salt and pepper and heat to boiling point for 5 minutes. Add milk, cream and butter. Heat just to boiling point. Serve piping hot with crisp crackers.
Note: When I can't get lobster meat, I use imitation crab, clams (canned) and a fillet of haddock.
