Marinated Black-Eyed Peas

Black-eyed peas are one of the few truly American good-luck foods for New Year's Day. Eating them on this day is traditional in the South, where a coin is sometimes cooked with the peas, foretelling riches throughout the coming year.

Ingredients:
2 cups cooked or canned black-eyed peas
1 medium red bell pepper, cut into narrow l-inch strips
2 scallions, minced
3 tablespoons minced fresh parsley
1 tablespoon olive oil
2 tablespoons apple juice or cider juice of 1/2 to 1 lemon, to taste
1 clove garlic, crushed, optional
salt and freshly ground pepper, to taste

Directions:
Combine all the ingredients except lettuce leaves in a mixing bowl and let stand, covered, for an hour or 2, refrigerated, before serving, or, better yet, make a day ahead. Stir occasionally. Before serving, remove the garlic. Line a shallow serving bowl with lettuce leaves and top them with the marinated mixture.
