Pumpkin HalwaIngredients:
Yellow pumpkin - 1/2 Kg
Sugar - 350 grams
Cashewnuts - 50 grams
raisins - 50 grams
Ghee - 100 grams
cardamom - 10 nos.(ground to powder)
Saffron colour - one pinch(Optional)
Grated pistachios - One tablespoon (Optional)Directions:
Remove the pumpkin skin/seeds and pressure cook the pumpkin for 10 minutes. Drain the water from the cooked pumpkin and mash it into pulp. Heat a pan and add one table spoon of ghee. Fry the cashewnuts and raisins and keep it aside. Heat one tablespoon of ghee in the pan and add the pumpkin pulp,sugar,saffron colour and cardamom powder and stir until the melted sugar blends well with the pulp, and the mixture leaves the sides of the pan. Add the remaining ghee, cashewnuts and raisins . Garnish with grated pistachios. Can be served hot as well as cold.
