Potato Siffron

Delicious potato siffron with pepper jack and capers.

Ingredients:
2 small red potatoes
1 oz pepper jack cheese
1 tbs. capers
1 pinch red pepper flakes
1/2 cup ranch dressing
1 can large black olives
1 pinch ketchup
1 tbs butter (can substitute mustard)
1 sprig mint leaves (do not chop)

Directions:
Slow-cook potatoes in CrockPot for 3 hours or less. In medium bowl, combine all other ingredients except for the olives. Set aside. Empty olive juice from can into small sauce pan. Place over medium heat. When potatoes have cooked to completion, take out of CrockPot and chop. Potatoes will be very hot! Take precautions. Mix chopped potatoes with ingredients in bowl, and serve with a red wine.

This is a wonderful main dish with a fruit cup for desert.
