Chocolate Self-Saucing Pudding

A really quick and easy (and delicious) pudding! Divine served with vanilla bean ice cream!!! NB Measurements are Australian so 1 cup = 250mL

Ingredients:
2 tspn butter
1/2 cup sugar
1 egg
1 cup SR flour
2 tspn cocoa
1/2 cup milk
1 tspn vanilla essence

Topping: 1/2 cup sugar
2 tspn cocoa
2 cups hot water

Directions:
Cream butter and sugar. Add egg and mix well. Fold in sifted flour and cocoa alternately with milk and vanilla.

Pour into greased deep ovenware dish. Topping: sprinkle the sugar and cocoa (mixed together) over the pudding mix and then gently pour the 2 cups of water over the top.

Bake in moderate oven 35-40 mins (until pudding springs back in center like a cooked cake).


Prep time: 10-15 minutes
