Kick it Up a Notch in New Orleans

Love Emeril? Well then you have to try his gourmet creations! Here's a review of three of Chef Emeril Lagasse's restaurants in The Big Easy in this article from New Orleans Gourmet!

The world of culinary professionals, critics, gourmets and foodies applauded enthusiastically when one of New Orleans' brightest stars -- Executive Chef Emeril Lagasse -- spun out into his own orbit, and opened Emeril's Restaurant in March 1990. From its first day, Emeril's Restaurant -- and the multi talented man who reinvents it at every meal -- became the focus of ecstatic praise.

Over a decade later, Chef Emeril remains devoted as ever to using fresh, top quality ingredients and employs cottage industry ranchers, farmers, and fisherman to ensure that he always get the freshest ingredients for the restaurant. Each night, Chef de Cuisine Chris Wilson designs a seven course degustation or tasting of his latest creations, based on the freshest and most exciting ingredients available.

The food at Emeril's is somewhat eclectic, but leans more toward what Lagasse calls "New New Orleans" cuisine. Although the menu often abounds with a pastiche of tempting dishes in the style of Southwestern, West Coast Oriental, or New England cooking, the roots of each -- as well as some of the ingredients -- are usually in the Creole genre.

Emeril's was recently renovated by renowned New York design company, the Rockwell Group. Completed in 2000, the new innovative details reflect the significance of the Warehouse District location, the new New Orleans cuisine and the extensive wine list.

Raw materials ranging from the cast metal door handles designed by Brad Oldham, to the plaster- lathe wood integrated in the giant wine wall, reflect the feel of the neighborhood. The Food Bar is framed by a tapestry of glass encased spices showcasing the bold and creative flavors Chef Emeril features in his signature dishes. Emeril's state-of-the-art kitchen is also visible from the main dining room.

Located in a renovated four-story French Quarter warehouse, Emeril Lagasse's second restaurant features the fresh adaptations of New Orleans Creole and Acadian Cajun cuisine for which Lagasse is renowned.

Because Lagasse believes in all things homemade, NOLA employs a full-time pastry chef and staff to prepare fresh breads, desserts, ice creams and sorbets on the premises and all charcuterie ­ preparation of sausages, bacon, tasso terrines ­ is performed by a full-time butcher.

Mozzarella cheese, Worcestershire and ketchups also are homemade. Under Chef Emeril Lagasse's direction, Chef de Cuisine Joel Morgan oversees the daily activities of the kitchen and the back of the house. Chef Joel makes his mark with picture perfect daily specials and tasting menus using all of the freshest ingredients available.

NOLA has proven immensely popular with locals and visitors alike. A relaxed atmosphere and the signature personal attention of Lagasse's staff lure his local following into the French Quarter. NOLA's location, innovative menu and personable service make both visitors and locals feel at home.

Delmonico Restaurant re-opened its doors in May of 1998, under the ownership and direction of Chef Emeril Lagasse. Delmonico, an icon in the New Orleans restaurant industry, has been in business since 1895 and closed its doors in February 1997 to re-establish ownership.

The building has gone through an extensive historic renovation under the direction of Peter Trapolin of Trapolin Architects in New Orleans. The two story structure, located on the corner of St. Charles Avenue and Erato Street in the Garden District, includes three main dining rooms, a bar and private party rooms.

The second level houses three additional dining rooms. The building is over one hundred years old and has been described as both Victorian and Edwardian in design. The interior reflects a classic understated elegance with high ceilings, wood floors and large paned windows overlooking St. Charles Avenue.

The style of cuisine at Emeril's Delmonico is Creole. Emeril's Delmonico incorporates the high standards of service and cuisine Lagasse has established at his three succeeding restaurants. Lagasse has created a menu that includes many of the classic items from the former menu while adding the inventive flavors that he is known for. Chef de Cuisine Neal Swidler adds his own creative flair to daily specials and nightly tasting menus.
