Kid Pleasin' Recipes

Kids always seem to have a sweet tooth, don't they? Here are some sweet breakfast and dessert recipes kids are bound to love for that special treat or birthday surprise!

Tasty treats
Below are two breakfast items and two desserts your children will love! The ingredients are readily available, and the recipes are easy and delicious.

Jumbo S'more Muffins
Ingredients:
1 1/2 cups all purpose flour
1/2 cup graham cracker crumbs
1/4 cup brown sugar, packed
1 teaspoon baking soda
1 egg
1 1/2 cups buttermilk
1/4 cup vegetable oil
3/4 cup chocolate chip morsels
1 1/4 cup mini-marshmallows, divided

Directions:
In a large bowl, combine the dry ingredients. In another bowl, combine egg, oil, and buttermilk. Mix well. Stir wet ingredients into the dry ingredients, just enough to moisten.

Fold in chocolate chips and 1 cup of mini-marshmallows. Grease jumbo muffin cups and fill three-quarters full. Sprinkle remaining marshmallows in the cups. Bake 18 to 20 minutes at 375 degrees F, or until a toothpick inserted in the center of the muffin comes out clean. Cool for 5 minutes, then remove the muffins and cool them on a wire rack. Serve warm. Makes 6 jumbo muffins.

Peanut Butter Pancakes
Ingredients:
1 cup pancake mix
2 Tablespoons sugar
1 egg
1/3 cup peanut butter
5-oz. can evaporated milk
1/3 cup water

Directions:
In a bowl, combine sugar and pancake mix. In another small bowl, beat the egg and peanut butter. Add milk and water. Stir in dry ingredients just until moistened. Pour batter by quarter cupfuls onto a greased medium-hot griddle. When bubbles form on the top of the pancakes, turn them over. Cook until the second side of the pancakes are golden brown. If you like, you can serve the pancakes with honey butter. Simply mix together 1/4 cup of softened butter with 2 tablespoons of honey. Makes 10 pancakes.

Chilly Peanut Butter and Jelly Pie
Ingredients:
8-oz. carton whipped topping, divided
9-inch graham cracker crust
1/2 cup strawberry jam
1 cup cold milk
3.5-oz. package vanilla instant pudding mix
1/2 cup smooth peanut butter

Directions:
Spread 1 cup of whipped topping over the bottom of the pie crust. Drop strawberry jam by tablespoonfuls onto topping. Spread carefully. In a bowl, combine milk and pudding mix with a wire whisk until thickened. Add peanut butter to pudding and mix well. Add the remaining whipped topping. Spread the mixture over the jelly. Cover and freeze until firm, 4 hours or more. Soften 10 minutes at room temperature before serving. Makes 6 to 8 slices.

Chocolate-Peanut Butter Pizza
ingredients:
7-oz package peanut butter cookie mix
12-oz. package of cream cheese, softened
3/4 cups cold milk
4-oz package instant chocolate pudding mix
8-oz container of whipped topping
1/4 cup mini chocolate chips

Directions:
Prepare cookie mix according to package directions. Press the dough into a greased 12 inch pizza pan. Bake 15 minutes at 375 degrees F, or until the dough is set. Cool the cookie crust. In a mixing bowl, beat the cream cheese until smooth. Spread it over the cooled crust.

In another mixing bowl, beat milk and pudding mix for two minutes on medium speed. Spread the pudding over the cream cheese layer. Refrigerate for 20 minutes, or until set. Spread whipped topping over top and sprinkle with chocolate chips. Chill 1 to 2 hours. Use your imagination, and add other toppings such as M&M candies, coconut, peanut butter chips, or candy bar chunks. Makes 12 servings.the end
