Add a little spice…
It's a versatile blend
of seasonings that I use all the time. You can
add it to chili, meat loaf, soups and casseroles.
It can be mixed with a cup of vinegar, and a cup
of water then placed in a shaker to baste pork
or beef while grilling. It is spicy, but you can control
that by adding it to taste. A little sprinkled in the
dish will add flavor but not hotness.
I use it with ground beef in place of taco seasoning,
and just add water and tomato sauce to the browned
meat then simmer. The following is a recipe for your
own Cajun blend:
- 4 tablespoons paprika
- 3 tablespoons each salt and garlic powder
- 1 1/2 tablespoons each of black pepper
- onion powder
- cayenne pepper
- dried oregano and dried thyme.
Spicy Fried Potatoes
Ingredients:
Directions:
Slice the potatoes into fairly thin strips. Add about
one tablespoon of oil to a hot pan, when heated, but
not smoking, add potatoes, cook several minutes,
then turn.
Add onion slices. Cook several minutes
and turn again, mixing in onion. Sprinkle with seasoning.
Cover and cook until tender on low heat. About 10-15
minutes. Turn occasionally. Serves 4-5.
