Three-bean salad with Champagne vinaigrette is a perfect picnic or outdoor living salad. Serve warm or at room temperature to really enjoy the flavors at their peak.

Three-bean salad with Champagne vinaigrette

Serves 8


  • 2 cups canned pinto beans, rinsed and drained
  • 2 cups canned black beans, rinsed and drained
  • 2 cups cut green beans, fresh or canned, rinsed and drained
  • 2 tablespoons Champagne vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)


  1. Combine the pinto beans, black beans and green beans in a large bowl and gently toss together.
  2. In a smaller bowl, whisk together the vinegar, mustard, salt, black pepper, smoked paprika and cayenne pepper.
  3. While continually whisking, stream in the olive oil until the mixture comes together in a dressing.
  4. Pour the dressing over the beans and toss to combine.
  5. Serve.
