Browned butter lemon cookies with yellow raspberry icing are basically summer in cookie form. Browned butter adds a depth of flavor, with the bright flavors of lemon and raspberry at center stage.

Browned butter lemon cookies with yellow raspberry icing

Serves 10-12

Ingredients:

  • 1-1/2 cups flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter sliced thinly, plus 4 tablespoons butter at room temperature
  • 2/3 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • Zest from 1 large lemon
  • 1 cup powdered sugar
  • 1 cup yellow raspberries, lightly mashed with a fork

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a small skillet over medium-low heat brown the butter by adding it to the pan and let it bubble, stirring constantly.
  3. As you start to see some brown in the color take note; it won’t take long to finish from there.
  4. Pour immediately into a cold bowl to stop cooking.
  5. Cream together the browned butter, brown sugar, egg, vanilla and lemon zest.
  6. Add the flour, baking powder, baking soda and salt.
  7. Roll into 1-teaspoon balls and bake at 350 degrees F for 8 to 10 minutes until the edges are just slightly brown.
  8. Let cool completely before adding the frosting.
  9. For the frosting beat together the 4 tablespoons of softened butter with the 1 cup of powdered sugar.
  10. Add the raspberries and gently fold to combine.
  11. Spread the frosting on half of the cookies, then top the frosting with another cookie to create a sandwich.
