Grilled spiced eggplant with tomatoes and feta cheese is a flavorful and beautiful way to get your family eating more vegetables. Tender, smoky eggplant and bright, fresh tomatoes team up with some salty feta to make your mouth water.

Grilled spiced eggplant with tomatoes and feta cheese

Serves 4


  • 1 large eggplant, cut lengthwise into 1/4-inch strips
  • 4 large beefsteak tomatoes, quartered
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • Chopped basil or parsley, optional garnish


  1. Heat a grill over medium-high heat.
  2. Brush the cut sides of the eggplant and tomatoes with olive oil.
  3. Stir together the paprika, cumin, salt and pepper.
  4. Sprinkle the vegetables with the spice mixture.
  5. Grill the cut sides of the vegetables for 3 to 4 minutes per side until tender and slightly charred.
  6. Remove from grill and immediately sprinkle with feta cheese and chopped herbs.
  7. Serve hot or at room temperature.
