Big green salad with cilantro-lime vinaigrette is a fabulous dish to take to any summer gathering. Wait to toss the salad together until the last minute and then serve.

Big green salad with cilantro-lime vinaigrette

Serves 10-12 people


  • 4 large hearts romaine lettuce
  • 1 large cucumber
  • 2 large beefsteak tomatoes
  • 1 cup thinly sliced radishes
  • Salt and pepper
  • 1/2 cup olive oil
  • Juice of 2 limes
  • 3 tablespoons honey
  • 1 bunch fresh cilantro, leaves removed and roughly chopped
  • 1 clove garlic
  • 2 teaspoons Dijon mustard


  1. Chop the lettuce, slice the cucumber and tomatoes, and toss together with the radishes.
  2. Season the salad ingredients lightly with the salt and pepper.
  3. Set aside until ready to serve.
  4. Combine all of the other ingredients in a food processor and pulse until well combined.
  5. When ready to serve, toss the salad with the dressing and serve immediately.
