Sometimes a change in dressing is all it takes to turn an average salad into something amazing.

Green bean, corn and tomato salad

I have to admit, the dressing for this recipe for green bean, corn and tomato salad with creamy avocado dressing is my favorite part. It coats all the other ingredients with a special something. It’s rich and creamy — about the same consistency as a standard ranch dressing — and it only takes a few ingredients to bring out its fantastic flavor. You may never go back to dressing from a bottle.

Tossed together with veggies like green beans, corn kernels and cherry tomatoes, and you’ve got a fab dinnertime salad. Use frozen or fresh beans and corn for this recipe. If using frozen, I suggest steaming them for a few minutes before chilling them.

Green bean, corn and tomato salad with creamy avocado dressing

Serves 3

Ingredients:

For the dressing

  • 1 large avocado, peeled and pit removed, cut into large chunks
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 2 tablespoons fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

For the salad

  • 1 head romaine lettuce, ends trimmed, torn into bite-sized pieces
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen green bean pieces
  • 10 cherry tomatoes, sliced in half

Directions:

For the dressing

  1. Combine all the ingredients into a food processor and blend until smooth.
  2. Taste and adjust the seasonings as needed.

For the salad

  1. Add the corn and green beans to a microwave-safe bowl and steam for 3 to 4 minutes.
  2. Rinse the steamed vegetables with ice water, drain, then refrigerate for at least 15 minutes.
  3. Add the romaine lettuce, chilled vegetables and tomatoes to a large bowl.
  4. Add the dressing to the mixture and toss to combine.
  5. Serve in individual bowls.
