Quinoa chocolate chip granola bars are a go-anywhere treat. Quinoa brings extra protein and a fun texture to these soon-to-be family favorites.

Quinoa chocolate chip granola bars

Makes 14 bars

Ingredients:

  • 1 cup crunchy peanut butter
  • 1/4 cup agave syrup
  • 1/4 cup honey
  • 1/3 cup coconut oil
  • 1 cup cooked quinoa
  • 1-1/2 cups rolled oatmeal
  • 1 teaspoon vanilla extract
  • 1/2 cup flaked coconut
  • 1/3 cup miniature chocolate chips

Directions:

  1. Line an 8 x 8-inch baking pan with foil and set aside.
  2. In a large bowl, stir together all ingredients until evenly mixed.
  3. Press into prepared pan in an even layer.
  4. Refrigerate for about 2-3 hours until mixture has hardened.
  5. Cut into bars.
  6. Refrigerate until ready to serve.
