Fresh roasted tomato and Parmesan pasta is a healthy and flavorful meal you'll feel good about feeding your family. Dinner under 30 is hard to beat.

Fresh roasted tomato and Parmesan pasta

Serves 6


  • 1 pound whole wheat spaghetti
  • 16 ounces chopped tomatoes
  • 4 cloves garlic
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup freshly grated Parmesan cheese
  • Salt


  1. Cook spaghetti in salted water just shy of al dente, about 8 minutes.
  2. Drain the pasta, reserving about 1/3 cup of the cooking liquid, and return to the pot.
  3. Add the roasted tomatoes and oil and stir to combine, cooking for an additional 2 to 3 minutes until the pasta is al dente.
  4. Remove from the heat and stir in the Parmesan.
  5. Serve hot.
