Strawberry fruit salsa

We love, love, love sweet, juicy strawberries — do you? I love eating them straight from the container but sometimes it’s fun to add a little creativity into your food and make recipes even more delicious. Here I will share three super easy and delicious fresh ideas using fresh strawberries. These are perfect snacks for your little ones and you can even ask for their help in the kitchen while preparing these treats.

Strawberry fruit salsa recipe

Yields 4 servings

Ingredients:

  • 1 cup fresh strawberries, finely diced
  • 1 mango, finely diced
  • 1 tablespoon honey or agave
  • 2 tablespoons fresh lime juice
  • Tortilla chips for serving (optional)

Directions:

  1. In a bowl, add all of the ingredients and mix well.
  2. Cover and chill for 1 hour. Remove from the refrigerator and mix well.
  3. Serve with cinnamon chips or tortilla chips on top of yogurt or waffles.

Strawberry cheesecake dip

Yields 4 servings

Ingredients:

  • 1 cup strawberry or vanilla Greek yogurt
  • 1/2 cup strawberry preserves
  • 2 tablespoons sugar-free JELL-O instant pudding mix in cheesecake flavor
  • 2 tablespoons agave

Directions:

  1. In a bowl, combine all of the ingredients mixing well. Cover and chill for about 1 hour to help the flavors blend.
  2. Remove from the refrigerator and mix well.
  3. Serve with chocolate graham crackers and fresh fruit.

Strawberry buttermilk ice cream

Strawberry buttermilk ice cream recipe

Yields 4 servings

Ingredients:

  • 1-1/2 cups fresh strawberries, roughly chopped
  • 1-1/2 cups low-fat buttermilk
  • 1/2 cup heavy whipping cream
  • 1/2 cup agave or honey
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Directions:

  1. In a bowl, add all of the ingredients mixing well.
  2. Pour the mixture into the container of an ice cream maker and freeze as per the directions on your ice cream machine.
  3. Once the ice cream has frozen, scoop into serving bowls.
  4. Garnish with fresh strawberries and serve immediately.
