It's true: You can make an entirely healthy and delicious dinner in one pot in 30 minutes or less. This miraculous one-pot pasta will be a staple in your weekly meal rotation. Just serve with a great side salad for a balanced meal!

Miraculous one-pot pasta

Serves 4-6

Ingredients:

  • 13.6 ounces whole wheat linguine
  • 1 large red onion, sliced thinly
  • 2 cups halved cherry tomatoes
  • 4 cloves garlic, minced
  • 1 cup fresh basil, roughly chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4-3/4 cups vegetable stock

Directions:

  1. Combine all ingredients in a large saucepan.
  2. Bring to a boil over high heat.
  3. Stirring frequently, cook until the pasta is al dente and the liquid has evaporated, about 11 to 13 minutes.
  4. Remove from the heat and check to season with more salt or pepper.
  5. Serve hot.
