Shaved Brussels sprouts with almonds, dried cherries and warm bacon dressing is this winter's answer to the summer salad. Shaved Brussels sprouts are a perfect base for salty bacon dressing, and the crunch and chew from almonds and dried cherries is enough to keep even the pickiest eaters coming back for more!

Shaved Brussels sprouts with almonds, dried cherries and warm bacon dressing

Serves 4

Ingredients:

  • 1 pound fresh Brussels sprouts, ends removed and shaved using a food processor
  • 4 slices thick-cut bacon, chopped
  • 1/4 cup dried cherries, roughly chopped
  • 1/4 cup roasted salted almonds, roughly chopped
  • 1 teaspoon Dijon mustard
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Directions:

  1. In a large saute pan, cook the bacon until crisp over medium-low heat.
  2. Remove the bacon with a slotted spoon and let drain on a plate covered in paper towels.
  3. Reserve 3 tablespoons of the rendered bacon fat, and leave the rest in the pan.
  4. Add the Brussels sprouts to the pan and increase the heat to medium-high.
  5. Saute for about 2 to 3 minutes until just starting to wilt.
  6. Remove from the pan.
  7. Combine the 3 tablespoons of bacon fat, mustard, red wine vinegar and garlic in the hot pan.
  8. Cook for 30 to 60 seconds until combined.
  9. Pour over the Brussels sprouts and then toss with the chopped cherries and almonds.
  10. Serve warm.
