Blueberry Breakfast Grilled Cheese | ChefMom.com

Blueberries and cream cheese come together in a delicious grilled cheese sandwich that's perfect for breakfast!

BLUEBERRY BREAKFAST GRILLED CHEESE

Recipe adapted from Once a Month Meals

Serves 2

Ingredients:

  • 1 tablespoon butter, melted
  • 4 slices French bread
  • 2 ounces cream cheese, softened
  • 2/3 cup blueberries
  • 1 tablespoon powdered sugar

Directions:

  1. Spread the cream cheese mixture on 2 slices of bread. Top each slice with 1/3 cup of blueberries. Top with remaining slice of bread.
  2. Heat skillet over medium heat. Brush outside slices of bread with melted butter.
  3. Cook on each side for approximately 3-4 minutes, or until each side is golden brown and cream cheese is melted. Remove from skillet and sprinkle with powdered sugar.

PEANUT BUTTER AND BANANA QUESADILLA

Serves 1

Ingredients:

  • 1/2 tablespoon butter, melted
  • 1 large flour tortilla
  • 3 tablespoons creamy peanut butter
  • 1 medium banana, sliced
  • 1/2 tablespoon honey
  • Ground cinnamon and powdered sugar for topping (optional)

Directions:

  1. Spread peanut butter over tortilla. Top with banana slices and drizzle with honey.
  2. Heat butter over medium heat in a skillet. Place tortilla in skillet. Cook tortilla until browned and fold in half.
  3. Remove from heat and slice into 4 wedges.
  4. Sprinkle with ground cinnamon and powdered sugar, if desired.

Ingredients:

  • 1/2 tablespoon butter, melted
  • 2 slices French bread
  • 1/3 cup sliced strawberries (about 2 large strawberries)
  • 1 tablespoon Nutella

Directions:

  1. Spread Nutella over 1 slice of bread. Top with strawberry slices. Top with remaining slice of bread.
  2. Heat skillet over medium heat. Brush outside slices of bread with melted butter.
  3. Cook on each side approximately 3-4 minutes, or until golden brown.

BACON PESTO TOMATO SANDWICH

Serves 1

Ingredients

  • 2 slices French or sandwich bread, toasted
  • 1 tablespoon prepared basil pesto
  • 3 slices bacon
  • 2 slices tomato

Directions:

  1. Cook bacon in a skillet over medium heat to desired crispiness. Place on a plate lined with paper towels to drain.
  2. Spread pesto on one side of toasted bread. Top with cooked bacon and tomato.
