Wheatberry salad with cherries, gorgonzola and pistachios is sure to impress any crowd. Build it ahead of time, sans pistachios, for a delicious party salad you can share with any guest.

Wheatberry salad with cherries, gorgonzola and pistachios

Wheatberry salad with cherries, gorgonzola and pistachios

Serves 6

Ingredients:

  • 2 cups cooked wheatberries
  • 1/2 cup dried cherries
  • 1/2 cup shelled pistachios
  • 1/4 cup gorgonzola cheese
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

  1. Whisk together the white wine vinegar, olive oil, Dijon mustard, salt and pepper until completely emulsified.
  2. Toss in the wheatberries, dried cherries and gorgonzola cheese.
  3. When ready to serve, top with the shelled pistachios.
  4. Serve at room temperature or chilled.
