Eggnog cupcakes with eggnog buttercream!

Eggnog cupcakes

Makes 24

Ingredients:

  • 1 white cake mix
  • 1 box instant vanilla pudding
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 4 eggs
  • 1 cup sour cream
  • 3/4 cup eggnog
  • 1/2 cup vegetable oil

Directions:

  1. Preheat your oven to 350 degrees F. Mix all ingredients together with a hand mixer.
  2. Place cupcake liners in your muffin pan, then using an ice cream scoop, add 1 scoop into each liner.
  3. Bake for 25 minutes or until set. Allow to cool, then frost with eggnog buttercream.

Eggnog buttercream

Makes enough to frost 1 (2-layer) cake or 2 dozen cupcakes

Ingredients:

  • 2 sticks butter, softened (not melted)
  • 3-1/2 cups powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 3 tablespoons eggnog
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract

Directions:

  1. Using a stand mixer (this can also be done with a hand mixer), beat the butter to cream it and make it soft and perfectly creamed.
  2. Sift the powdered sugar, cinnamon and nutmeg, and slowly add into the butter mixture.
  3. Beat together until it is a crumbly mixture. Add the vanilla and almond extracts, then add the eggnog. Increase the speed.
  4. If your icing is too stiff, add a bit more eggnog. If it is too runny, add a couple of tablespoons of powdered sugar.
  5. Frost your eggnog cupcakes with this eggnog buttercream.
