Creamy, cheesy and full of flavor from curry powder, this curried chicken and broccoli casserole will become a dinner rotation staple!

Cheesy curried chicken and broccoli casserole

Serves 4


  • 1 rotisserie chicken, meat removed and chopped into bite-size pieces
  • 4 cups broccoli florets
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup Greek yogurt
  • 1/3 cup chicken stock
  • 1 teaspoon yellow curry powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons melted butter


  1. Preheat oven to 350 degrees F. Spray a 2-quart baking dish with nonstick spray.
  2. Evenly cover the bottom of the dish with the broccoli florets. Evenly cover the broccoli florets with the chopped chicken.
  3. In a large bowl, whisk together the soup, yogurt, chicken stock, curry powder, garlic powder, salt and pepper. Spread over the chicken.
  4. Sprinkle the cheese evenly on top of the soup mixture.
  5. In a small bowl, toss the Ritz crackers with the melted butter. Sprinkle evenly on top of the cheese.
  6. Bake at 350 degrees F for 35-40 minutes.
  7. Serve hot.
