Garlic pasta recipe

Easy garlic pasta recipe

Serves 4

Ingredients:

  • 1 pound whole wheat pasta
  • 4 tablespoons butter
  • 4 tablespoons extra virgin olive oil
  • 10 cloves garlic, peeled and thinly sliced
  • Freshly grated Parmesan cheese

Directions:

  1. In a large pot over medium-high heat, boil the noodles until tender, and then drain.
  2. Place the pot back on the stove and melt the butter in the bottom of the pan.
  3. Add in the 4 tablespoons of olive oil and the sliced garlic. Saute until the garlic is tender.
  4. Pour the pasta back in the pot and toss to coat it in the garlic and olive oil.
  5. Transfer the pasta to a plate and top with freshly grated Parmesan cheese.

Roasted garlic soup recipe

Serves 4

Ingredients:

  • 2 heads garlic
  • 4 tablespoons olive oil, divided
  • 1 small onion, diced
  • 1 (32 ounce) carton chicken broth
  • 2 large russet potatoes, cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Italian seasoning

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Chop the tops off of the 2 heads of garlic. Place them on a piece of aluminum foil and drizzle with 2 tablespoons of olive oil.
  3. Wrap the garlic heads in the aluminum foil and bake them in the oven at 400 degrees F for 1 hour until the garlic cloves are tender.
  4. Remove the garlic from the oven and allow it to cool. Once it has cooled, remove the cloves from the heads of garlic.
  5. Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add in the garlic cloves and diced onion and saute until the veggies are tender.
  6. Pour in the chicken broth, and then add in the potatoes, salt, pepper and Italian seasoning.
  7. Bring the soup to a boil and cook for 8-10 minutes until the potatoes are tender.
  8. Puree the soup with an immersion blender until the soup reaches a smooth consistency. Transfer the soup to bowls and serve.

Garlic stuffed chicken recipe

Serves 4

Ingredients:

  • 4 boneless skinless chicken breasts
  • 6 cloves garlic, minced
  • 1/2 cup chopped fresh chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons extra virgin olive oil

Directions:

  1. Slice the chicken breast down the middle, lengthwise. Be careful not to completely separate the 2 halves of the chicken breast.
  2. In a small bowl, combine the minced garlic, chives, salt and pepper.
  3. Spread the garlic mixture on the inside of each chicken breast.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Cook the chicken in the skillet until both sides are lightly golden brown and juices run clear.

Garlic hummus recipe

Makes 1-1/2 cups

Ingredients:

  • 8-10 cloves garlic
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Place the unpeeled garlic cloves on a baking sheet and bake them in the oven for 45 minutes.
  3. Remove the garlic cloves from the oven and allow them to cool. Once they have cooled, peel the garlic cloves and put them in a food processor.
  4. Add the chickpeas, tahini, sesame oil, olive oil, salt and pepper to the food processor. Process until the mixture is smooth and creamy.
